medium onion -- chopped

cup rice

cups chicken stock

ounces frozen spinach
In a medium sauce pan, melt butter, add
onions, and sauté until tender. Add rice and stir. Add chicken stock
and bring to the boil. Cover and simmer for 10 minutes. Add spinach;
return to the boil, cover, and simmer until rice is just tender,
about 15 minutes. Remove from heat and allow to stand for 5 minutes
before serving.
